I became a big fan of Splenda while pregnant with my son. I was diagnosed with gestational diabetes and found that Splenda was the only sugar substitute that came the closest to tasting like real sugar. I still use it daily in my morning coffee and also buy it by the bag to make our sweet tea.
Courtesy of Splenda and Mom Central, I was sent a box of Splenda Granulated and a Splenda Tastebook filled with 40 classic recipes to try out. We braved the kitchen (my son loves baking cookies, cakes, etc.) and tried out the Crispy Chewey Oatmeal Rasin Cookies and were not disappointed in the taste. It’s super easy to incorporate Splenda as a sugar substitute in cooking and I have pledged to use it more in our dishes which call for regular sugar.

I too had gestational diabetes (uugghhh!) and still use Splenda as my sweetner in my tea.
However, have never tried baking with it, but sounds like a good thing to try!
