Back when I was in junior high school, we basically had four choices when it came to class electives. Band (tried that and it didn’t stick), Art (I am sooo not artsy), Industrial Arts (which was basically a fancy name for “shop”, and none of the girls would be caught dead taking that), and Home Economics. Naturally, Home Ec won out. We had a great teacher who still teaches to this day, and I have fond memories of the class, the fondest being the huge wall-sized mirror in the classroom in which you would have to walk through a fog of Aqua Net to get to so you could primp and fix your makeup. The other fond memory is what I affectionately call “Home-Ec Pizza”, a seriously easy pizza recipe!
When we weren’t getting a basic introduction to sewing (in which I was a miserable failure at) or talking about our reproductive organs (in which my thirteen year-old self could do nothing but giggle about and be grossed out at ), we learned some basic cooking skills. For some reason, the highlight of the study in cooking was getting to make pizzas out of biscuit dough one day. We had fun making them, but I can remember not being as enthused about having to wash the dishes we used in class. Some things never change.
HOME-EC PIZZA
1 can of biscuits (I prefer Pillsbury)
1 small jar of pizza or spaghetti sauce
Shredded mozzarella cheese
Mini pepperonis, sausage, or whatever you like to top your pizza
Preheat oven according to directions on biscuit package. Take each biscuit dough slice and flatten it with your fingers (but not too flat). Spoon on about a tablespoon (more or less to your preference) of the pizza/spaghetti sauce. Top with shredded mozzarella cheese and your toppings and bake according to directions on biscuit dough package. Prepare for your children to be utterly amazed.
So yesterday while hanging out with E.B., it occurred to me that I had all the ingredients to make this “fancy” meal for my son, so I figured I would try it out on him.
I presented him with these pizzas and he raved about them and declared he was so glad I had remembered to buy those mini frozen pizzas he loved! I actually fooled my kid, so I guess that’s good?
