For the past three weekends in a row I’ve had a huge plate of boiled crawfish, complete with new potatoes, corn on the cob, and sausage. And although my husband and son refuse to sit near me while I am enjoying this Louisiana delicacy, it’s one of the big things I look forward to each spring. It’s a lot of work peeling the tail for such a small amount of meat, but that’s half the fun of it.
