Roasted Chicken and Homecoming. How’s that for a title? Haha! But first, Happy October! This year is really zooming on by. I really can’t believe it’s October. It seems like yesterday that I was just planning out my goals for this new year. Considering I don’t feel like I have accomplished much, that will be a fun post to look back over. Haha!
Homecoming
Friday was Homecoming at the Teen’s school. It was a half day for the school, and the morning was filled with working on Homecoming floats, a parade, and a big pep rally. As part of senior privileges, the Teen didn’t have to be at school until 9:00 AM, so he got to sleep in a little. I think the best part about the day was the parade. He rode with two other classmates and got to throw candy to the younger students.
He wasn’t interested in going to the game, so we watched it on our Smart TV at home that night. The Seniors won the float contest and one of his sweet classmates he has known since Pre-K was crowned Homecoming Queen. I am so glad his school has an app where we can watch the games from the comfort of our home. It was a pleasant night weather-wise, but every game before that has been awfully hot, even at night. His school won, so it was an all-around fantastic homecoming, I would say!
Roasted Chicken
Last weekend, when we did our freezer inventory, we found a whole young chicken we knew we needed to do something with. I looked around online and found an easy-sounding recipe for Crock Pot Roasted Chicken to try out. I went with this recipe from Dinner at the Zoo, and it ended up truly easy and so delicious! I went easy on the paprika, and instead of resting the bird on foil, we dumped in sliced red onions, potatoes, and baby carrots in the bottom.
I couldn’t decide which was more delicious, the chicken or the vegetables.
All I know is that it was one of the best crockpot meals we have made in a while, and Hubby is excited to make it again!
And all The Other Stuff
I can’t remember if I mentioned last week or not, but the roofers showed up to take more measurements on Monday, so hopefully, we may see some progress on that this week. Hubby and I got to enjoy a lunch out together on Friday at one of our favorite Mexican restaurants. The Teen was also out early that day but wanted to eat with my mom and a couple of her friends instead. So, we had a “real” date. Haha!
This week is supposed to be warm again (surprise, surprise), but NEXT week is supposed to be the start of a real cool-down for us. I pray it isn’t another dose of False Fall. Got anything fun going on this week?

Glad the teen got a short day and could enjoy the game from home. My kids were the same way – not into some of that stuff.

Seems to be homecoming time all around the place!
The chicken and veggies look yummy. We are expecting some cooler weather by the end of the week – but a warm start as well.
