Pork Steak and Hidden Valley Potatoes

One good thing about being off work all summer is that I have time to cook like I really want to.  During the week, E.B. and I eat with my parents a few nights and we order pizza one night during the week, so I look forward to the weekends when my husband, who adores being in the kitchen, cooks up my favorite meals.  I’ll be the first to admit I’m not the greatest cook.  You definitely won’t be seeing tons of recipes here on my blog, but when I do find something I love and cook really well, I like to share it.

Pork Steak & Hidden Valley Potatoes

When I cook, I keep it simple.  No exotic ingredients over here, y’all.  I also can’t promise you this is the healthiest meal, but if you love meat and potatoes, I can promise you this is amazing.  Do you like beautifully plated food pictures?  So do I!  But again, you won’t find that here.  These few pictures are compliments of my Nokia Lumia 1020.  No fancy shmancy camera here.

For the pork steaks, I marinate them in this Jack Daniels liquid marinade for a few hours before I grill them.  This stuff is my husband’s discovery, and it’s just as amazing on chicken and beef.  In fact, I think it’s so good that I would rather eat a steak my husband makes with this stuff at home than go out and have one in a restaurant, and THAT is saying a lot.

Once you marinate them, pop them on the grill (I use a small George Forman) and grill them until done.  That’s it!  See?  Even I can do this!

The potatoes are super simple as well.  My mom made these when I was growing up and it quickly became one of my favorite side dishes.  I use the small red potatoes because they cut easier.  Just wash and chop up a bunch, spread them in a casserole dish (any size, really).  Melt a stick of butter and drizzle over the potatoes, then shake a pouch of the dry Hidden Valley Ranch Dressing Mix (several packages come in a box) and cover them with foil and bake at 350 for an hour.

Again?  Easy!

Can you believe my child won’t eat ANY of this?  Oh well…more leftovers for me!
