Best Taco Soup Recipe Ever- Easy and Quick Dinner Idea

Best taco soup recipe ever!  OK. I’m kidding.  This is totally like every other taco soup recipe you see on the internet, but man, is it good! That’s why I call it the best taco soup recipe ever!  I have made 2 huge pots of this so far in the past couple of weeks and it is super easy and makes enough to have for a couple of meals. You could even do this in the crock pot and it would be great.  This is perfect to make for lunch or dinner on those chilly winter nights.

TACO SOUP RECIPE

2 pounds of ground beef

1 onion (diced)

2 cups of water

1 can of Rotel tomatoes (I always buy the mild)

1 can of kidney beans (more if you want)

1 can of diced tomatoes (2 cans if you want)

1 can of corn (more if you want)

1 package dry taco seasoning

1 package dry ranch dressing mix

Brown the ground beef and diced onion in a skillet and drain off the fat.  Put ground beef into a big soup pot.  Add the water and before you stir in all other ingredients, be sure to drain the corn and the beans.  OK.  NOW stir in all the ingredients!  Bring to a boil, then simmer on low heat for about an hour, stirring occasionally.

We always top ours with shredded cheddar cheese, sour cream, and a little taco sauce.  We also like to use tortilla chips to scoop it up with.  I’ve even dumped a can of diced potatoes in there which was good as well.

    I wonder what if you don’t have an onion? Can you use onion powder or minced onion in a container?

      Hi Kiana! This is a great soup to serve to a crowd. Not sure how many you will be feeding, but one batch would feed 6-8 people. Now, if they love it and want more, you may want to double the recipe. Thanks for stopping in!

    In your recipe you say to use Rotel tomatoes, what kind are these? I don’t see them in our grocery store (Canada). What can I use as a substitute?

      Hi Brenda! Rotel tomatoes are just canned tomatoes here that also contain green chilies or jalapenos, which add a little heat. I use the mild kind. I just saw a ton of recipes for making your own rotel tomatoes (just Google rotel tomatoes) or maybe they are sold under a different brand there? I wish I could be more help, but making them at home looks super easy if you don’t mind a little heat.

        I dont like the taste of the rotel, so I do diced tomatoes and green chiles, they add their own flavors.

          I’m not a fan of the Rotel anymore, either. I just do the diced tomatoes now. I’m sure the green chillies are great, though! I need to try that!

    I saved your recipe after seeing many others. I used northern beans and a can of Cuban style black beans on top of the rest because I had them at home and a friend made me a bowl before that had black beans. Like others, I added beef broth as well. So good!

          Me too! I actually did it tonight. I wish I could share a picture! I don’t drain any of mine and I don’t use chicken stock. I just let the juice from each vegetable bean stock. This is a great recipe that I like to use and follow if I forget what I normally put in it!

    Mine is pretty close but instead of water, I use V8 juice and I also use hominy instead of corn. It’s also tasty.

    Instead of Kidney Beans, I add 1 can each of Ranch Style Beans and Pinto Beans. Also one can (drained and cut in half) of black olives. Instead of water, I add a can of beef broth. Bring to boil. Crunch Tortilla Chips on bottom of bowl, cover with hot Taco Soup, & add shredded cheese on top. Very good.
