My mom is a whiz at improvisation. The other night she was making chicken and rice casserole for dinner and realized she didn’t have any onion soup mix for it. Instead of making a special trip to the store or nixing the casserole altogether, she substituted the onion soup mix with a vegetable soup and dip mix (she used Lipton). We all agreed the result was even better than the regular chicken and rice casserole she normally made and the vegetables inside were a plus!
Vegetable Chicken and Rice Casserole
1 stick of butter (melted)
1 envelope vegetable soup/dip mix
2 cups water
1 cup of rice (not instant)
chicken breast chunks (as many as you prefer, uncooked)
diced mushrooms (optional)
Mix all ingredients together in casserole dish and cover with foil. Bake at 350 for 1 hour.
